SALMON AND VEGGIE

Surprisingly, I’m not a big fan of Salmon. My husband on the other hand absolutely loves Salmon. I admit lately I’ve grown to like it. I’ve even had cravings lately. Here’s the thing, the issue I have with cooking Salmon is that, it’s a type of fish if you’re not careful can end up being either overcooked on the outside or undercooked from the inside. I remember cooking Salmon for the first time. I actually overcooked it, which caused my salmon to be really dry and overly seasoned. However, over the years, after a few trials and errors, I’ve learned to master the art of cooking Salmon perfectly. It’s really simple. In a nutshell, if your looking to cook a quick and easy dinner, here’s a recipe for you. Salmon with a side of veggies. Delish!

Ingredients:

2 Fillets of Salmon Tails. (either cuts can be used also)

Olive Oil or Butter

Salt, Pepper, and Seasonings of your choice

Parsley Flakes

Veggie: Either Fresh Corn, Spinach, or Broccoli

 

Directions:

Salmon:

Prep your Salmon fillets by cleaning and washing it off. (I usually clean my fish with lemon, vinegar, or water, however this time I opted for water only.) After cleansing the fish, start seasoning your fillets by lightly adding pepper, salt, and your choice of seasonings to both sides. Word of caution, don’t over kill it with the seasoning. Too much seasoning makes one salty tasting fish, and you don’t want that. Next, place your pan on the stove bringing it to a medium-high temperature. Then, drizzle some olive oil into the pan or if you prefer butter instead, spread a tablespoon of butter into the pan. Allow the pan to warm up before placing the Salmon in it. Once the pan is warmed enough, go ahead and place the salmon into the pan. Allow it to be cooked for 10 minutes before flipping it over to the other side. Once both sides have cooked a descent amount of time, lower the temperature slightly bringing it to medium-low, allowing the salmon to simmer on both sides each for another 5-10 minutes. repeat the steps if neccessary. Finally, your salmon should be good and ready to be served. Yummy!

Veggie:

I decided have corn-on-the-cob as a side to go along with my Salmon. I know! The combination seems rather odd, but hey, that’s the beauty of cooking. It doesn’t always have to be traditional. Anyhow, corn is very easy to cook. All you need to do is fill a cooking pan with water, bring to boil on the stove. Throw a dash of salt, to give it a little taste. Place your corn inside the pan to boil. Allow for the corn to boil for about 10-15 minutes or until it starts to change into a golden yellow color. Drain the water, butter your corn, or if you’re like my husband you prefer no butter at all, that too is okay. Lastly, if a side of corn isn’t your thing, you can always substitute it for another veggie of your choice such as broccoli, Spinach, carrots, potato, or asparagus.
